One-Pot Leek and Cherry Tomato Pasta
Gluten-Free, Low FODMAP, Vegan
only the green part, sliced*
cherry tomatoes halved
low fodmap vegetable or chicken stock*
salt and pepper
Add the sliced leek and cherry tomatoes with some olive oil in a pan and saute for 5min over medium heat.
Add the vegetable broth and let it starts to boil.
Once boiling, add the pasta and let it cook.
1.Only the green part of the leek is low FODMAP, so make sure you buy the one with long green tips.
2.Choose stock that are gluten free and does not contain onion or garlic.
