No-Bake Peanut Butter and Jelly Thumbprint Cookies

These cookies have that melt-in-your-mouth texture, plus they are super flavorful, extremely easy to make, and very delicious!

Ingredients
  

  • 90 g (1cup) Oat Flour (or Almond Flour)
  • 127 g (½ cup) Peanut butter
  • 110 g (⅓ cup) Maple Syrup
  • 3 tablespoon Jam of choice

Instructions
 

  • In a medium bowl add oat flour, peanut butter and maple syrup.
  • Using your hands, mix all the ingredients together. At first the dough will look a bit crumbly but don’t worry as it will come together as you mix and press it.
  • Once your dough is ready start forming the cookies. Use your pointer finger or thumb to make an indent, but be careful not to press too forcefully because you can crack the cookies. You can use cookie scoop to make equally sized cookies. My scoop holds 1 ½ tablespoon dough and I got 11 cookies.
  • Once you have your cookies, it’s time to fill them with jam. You can use any fruit jam of choice, however if you are following the Low FODMAP diet or you want to make a refined sugar-free jam, than I recommed that you make this one.
  • You can enjoy your cookies immediately.
