Ingredients
 
 

  • 2 cups cottage cheese
  • 1 cup rolled oats
  • cups fresh blueberries devied
  • 3 large eggs
  • ¼ cup honey or maple syrup
  • ½ teaspoon cinnamon
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease either a 9x7, 8×8-inch baking dish or you can also use several small ramekins.To achieve a silky texture, blend the cottage cheese, oats, eggs, honey or maple syrup, vanilla extract, lemon zest and cinnamon until smooth. If you prefer a more textured consistency, whisk everything together instead of blending.Gently stir in the fresh blueberries, ensuring they are evenly distributed.
  • Pour the batter into the greased dish, spreading it out evenly.
  • Bake for 25–30 minutes, or until the top is golden and fully set.
  • Allow it to cool for five minutes before serving. Enjoy warm, either on its own or with toppings like greek yogurt, jam, or a drizzle of honey or maple syrup.

Notes

  • I recommend using fresh blueberries as the frozen can color your batter. However, you can still make it with frozen blueberries just be prepared that your batter may get colored. 
  • You can also use mixed berries or any other fruit of choice.
  • To make it more nutritious you can stir in some nuts or seeds.
  • If the top starts browning too quickly, tent the dish with aluminum foil to prevent it from overbaking.
  • Let it cool slightly before slicing—this helps it set and makes serving easier.
  • If you are gluten intolerant make sure to use certified gluten-free oats.
Storage:
  • Refrigerator: This bake keeps its creamy texture even after chilling. Store it in an airtight container in the fridge for up to 3 days.
  • Freezer: Freeze individual slices for up to 3 months. When you’re ready, thaw overnight in the fridge and reheat in the microwave, oven, or air fryer until warmed through.
