  • 1 cup cottage cheese
  • ½ cup Tex Mex shredded cheese
  • ½ teaspoon taco seasoning
  • tortilla chips, crackers or vegetables

Toppings, optional

  • finely chopped tomato, jalapeno, cilantro, red onion

Instructions
 

  • Combine the cottage cheese, tex mex cheese, and taco seasoning in a blender. Blend until the mixture is completely smooth.
  • Stovetop (Recommended): Pour the cottage cheese queso into a small saucepan and warm it over low heat, stirring frequently until heated through. Avoid overheating, as this can cause the queso to separate and lose its smooth, creamy texture.
  • Microwave: Transfer the queso to a microwave-safe bowl and heat in 15-second intervals, stirring between each round, until warm. Important: Microwaving too quickly or for too long can cause separation—heat gradually to keep the queso creamy and smooth.
  • Once heated, pour into a bowl or any serving dish of choice and, if desired, sprinkle with extra cheese and toppings. Serve warm alongside tortilla chips, crackers, cottage cheese chips or fresh vegetables.
  • Store leftovers in an airtight container in the fridge for up to 3 days. To reheat warm on the stovetop over low heat or microwave in short intervals, stirring frequently. I don;t recommend freezing this dip as it cause changing of the texture and separation.

Notes

  • Instead of Tex-Mex Cheese, you can also use Cheddar or Monterey Jack cheese. If you want to keep it lower in fat, you can replace the cheese with 3 to 4 tablespoons of Nutritional Yeast.
  • Taco Seasoning: Enhances the flavor and gives the dip a bit of spice. You can adjust the amount according to your taste.
  • Toppings (Optional): I like adding finely chopped tomato, jalapeño, cilantro, and red onion for extra flavor and freshness. However, this is entirely optional, and you can use any toppings of choice or omit them completely.
  • Use Whole Milk Cottage Cheese: Whole milk cottage cheese is higher in protein and will give you a creamier texture
  • Blend Well: If you want to get that ultra velvety texture, make sure to blend well.
  • Heat Slowly: Low and slow heating keeps the queso from separating. If using a microwave, heat in 15-second intervals, stirring each time, until warm. be careful not to overheat it, as that can affect the texture.
