Equipment

  • 1 8-inch Loaf pan

Ingredients
  

  • 3 medium bananas mashed
  • 2 large eggs
  • ½ cup brown sugar
  • 1 ⅓ cup self-rising flour (use gluten-free if necessary)*

Instructions
 

  • Preheat the oven to 180C/350F and line a loaf pan with parchment paper.
  • Add the mashed bananas, eggs, and brown sugar in a large mixing bowl. Mix well to combine all the ingredients.
  • Next, slowly add in the flour and mix until just combined. Be careful not to overmix the batter
  • Transfer the batter to the prepared loaf pan and place in a preheated oven.
  •  Bake at 180C/350F for 40-45 minutes or until a toothpick comes clean.
  • Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Notes

*If you want to make this banana bread gluten-free, then you can either use a self-rising gluten-free flour or an all-purpose gluten-free flour like Bob’s Red Mill Gluten-Free 1:1 Baking Flour and add 3 ½ teaspoons baking powder.
