Cheeseburger Bowls

If you are craving a cheeseburger but want something lighter and lower in carbs. Then these cheeseburger bowls are for you! They have all the classic ingredients, juicy beef, crisp veggies, melty cheese, and a tangy burger sauce—however instead of in a bun they are served in a bowl.

Ingredients
 
 

  • 1 lb lean ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ tsp black pepper

For the burger sauce:

  • ½ cup mayonnaise
  • 2 tablespoon ketchup
  • 1 Tbsp yellow mustard
  • 1 tablespoon pickle juice
  • 2 tablespoon dill pickles chopped
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder

For the bowls:

  • 2 heads Romaine lettuce
  • 2 cups Cherry tomatoes halved
  • cups cheddar cheese shredded
  • ¼ cup jalapeno slices pickled
  • ½ cup pickles
  • onion sliced

Instructions
 

  • Heat a skillet over medium-high heat, then add the ground beef and seasonings. Cook, breaking it into crumbles, until fully browned and no pink remains.
  • While the beef cooks, make the burger sauce. In a small bowl, whisk together all the ingredients until smooth and well combined.
  • To assemble the cheeseburger bowls, start with a layer of romaine lettuce. Add your toppings, then spoon the cooked beef over them. Finish by drizzling the burger sauce on top.

Notes

  • If your beef has a higher fat content, drain it after cooking. I like using 85/15—it’s flavorful but not too greasy. 80/20 works, too, just make sure to drain it. With 90/10, you probably won’t need to.
  • Want a richer flavor? Brown the beef a little longer until the edges crisp up slightly

Storage and Meal Prep Instructions

  • Storage: Fully assembled burger bowls don’t hold up well for long—especially with the sauce added. The lettuce can get soggy, and the beef loses its texture.

Meal Prep Burger Bowls:

To make ahead, keep everything separate:
  • In one container: cooked ground beef.
  • In another: the sauce.
  • In a meal prep container: lettuce and toppings.
When you're ready to eat, warm up the beef, layer it over your bowl, and drizzle with the sauce. Store in the fridge for up to 3–4 days.
