This Creamy Spinach Pasta is rich, satisfying, savory, comforting, and very simple to make! The spinach and feta combo gives this pasta that spanakopita flavor.
Cook pasta according to package directions. Drain and reserving 1 cup of the cooking water.
In a large pan, heat up garlic infused olive oil, (if using garlic add the minced garlic too) add the spinach and sauté on medium heat or 5 to 8 minutes or until the spinach is wilted .
Add the cream cheese and let it cook on medium heat for another 5 minutes. Add the crumbled feta cheese and cook for about 3-4minutes or until the feta is melted.
Stir in the pasta, add reserved cooking liquid if needed to loosen the sauce.
Serve while it is warm.
Notes
*You can use fresh or frozen spinach. If you decide to use frozen spinach you might need to cook it for a bit longer to make sure it is completely thawed and the water has evaporated.*You can use any cream cheese of your choice. Regular or dairy-free for plant-based.*You can replace the feta with white salad cheese or parmesan cheese. You can also use plant-based feta if needed.
