🍝 Ingredients & Substitutes
Garlic-infused olive oil. This pasta has a milder flavor which is why I've decided to use garlic-infused olive oil. Also, this makes the recipe low FODMAP and tummy-friendly! However, if you want a more garlicky flavor then you can use regular olive oil and one or two cloves of garlic (depending on how garlicky you want it!)
Spinach. You can use fresh or frozen spinach. If you decide to use frozen spinach you might need to cook it for a bit longer to make sure it is completely thawed and the water has evaporated.
Cream Cheese. You can use any cream cheese of your choice. If you are looking for something tummy-friendly you can use lactose-free cheese or for dairy-free a plant-based one!
Feta Cheese. The feta provides that perfect savory taste and I highly recommend using a good quality feta cheese. To substitute it you can use any white salad cheese or parmesan cheese. However please note that the flavor will be a little bit different. To make it dairy-free use plant-based feta cheese.
Salt & Black pepper. Adjust the seasoning according to taste
Pasta of choice. You can use regular or gluten-free pasta. I like using penne but you can also use spaghetti, linguine, tagliatelle, or fusilli.
🥣 How to make Creamy Spinach Pasta
Step 1: Cook the pasta
Cook pasta according to package directions. Drain, reserving 1 cup cooking water.
Step 2: Make the creamy spinach sauce
In a large pan, heat up the garlic-infused olive oil (if using garlic add minced garlic cloves now) then add the spinach and sauté on medium heat for 5 to 8 min or until the spinach is wilted. If you are using frozen spinach you might need to cook it a bit longer. Add the cream cheese and let it cook on medium heat for another 5 minutes. Finally, add the crumbled feta cheese and cook for about 3-4 minutes or until the feta is just melted. Season with salt and pepper according to taste.
Step 3: Assemble
Stir in the pasta, add reserved cooking liquid if needed to loosen the sauce.

- Make sure to use good quality cream cheese and feta cheese as they carry a lot of flavor in this dish.
- Once you add the pasta don’t over-stir as that can make your pasta break apart.

📕 Storage Tips
- Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days.
- You can reheat it in a pan on the stovetop or in the microwave.
- I don’t recommend freezing it as creamy pasta dishes don’t freeze very well

- 3.5 oz feta cheese*
- 10.5 oz pasta of choice (regular or gluten-free)
