What Ingredients you will need to make these No-Bake Peanut Butter and Jelly Thumbprint Cookies?

  • Oat Flour (or Almond Flour)
  • Peanut Butter
  • Maple Syrup
  • Jam of choice (if you have time you can make this easy Strawberry Spread)

How to make these No-Bake Peanut Butter and Jelly Thumbprint Cookies?

These cookies are incredibly easy to make and take less than 15 minutes! You will need to follow 2 very simple steps:

STEP 1 – MAKE THE COOKIE DOUGH

In a medium bowl mix the oat flour with peanut butter and maple syrup.  Using your hands, mix all the ingredients together. At first, the dough will look a bit crumbly but don’t worry as it will come together as you mix and press it.

STEP 2 – FORM THE COOKIES

Once your dough is ready start forming the cookies. Use your pointer finger or thumb to make an indent, but be careful not to press too forcefully because you can crack the cookies.

You can use a cookie scoop to make equally sized cookies.

My scoop holds 1 1/2 TBSP dough and I got 11 cookies. Once you have your cookies, it’s time to fill them with jam. You can use any jam of choice, however, if you want to make a refined sugar-free jam that is also FODMAP friendly, I recommend that you make this one.

And that’s all. You can enjoy your cookies immediately.

FODMAP Tip:

Many store-bought jams are not FODMAP friendly, therefore if you are in the elimination stage of the FODMAP diet I strongly recommend that you make this easy homemade strawberry spread.

*Gluten-Free Tip:

If you are celiac or highly sensitive to gluten, make sure to buy certified gluten-free oats.
